How to make Jun tea?
Ingredients
- loose leaf green tea 2 teaspoons (for better taste)
- Raw honey ½ cup
- Water 8 cups
- 1 Jun SCOBY (buy fresh or covert kombucha SCOBY)
- Jun tea from a previous batch (1/2 cup)
- Gallon jar 1
- Cloth for covering (muslin or cotton cloth)
- Rubber band
Method
- Boil the water (2-4 cups) and add the tea.
- Steep the tea for 5-10 minutes.
- Strain the tea with a fine-mesh strainer into the jar and add the raw honey.
- Stir until honey dissolves and cool it down completely at room temperature.
- Pour the mixture into a gallon jar and add the rest of the water to the jar.
- Add the SCOBY and jun tea from a previous batch to the tea
- Cover the jar with a cloth and secure it with a rubber band.
- Place in a cool and dark place for 3-5 days at room temperature.
- Taste test after 3 days. It should smell a little sweet and pleasantly sour; your Jun tea is ready to drink.
- To use this mother culture again, save 1/2 cup of Jun culture and liquid from the top for a second batch.
- Store it in the fridge or repeat steps 1 through 10 to start a new batch.
- Pour it in a flip-top bottles, if you want jun tea bubbly for more days.
